PAKORAY

Ingredients:
-1/2 cup besan (dried chickpea flour)
-5 oz. warm water
-1/4 tsp. red pepper
-3/4 tsp. salt
-1/2 tsp. Garam Masala paprika (optional)
-1 small onion
-1 potato
-a few spinach leaves
-oil for deep frying

Method:
In a bowl put the besan and half the water and stir until it becomes a thick batter. Beat hard for 5 minutes gradually add the rest of the water and leave to swell for 30 minutes Add salt and pepper and Garam Masala and beat again. Wash, peel and slice onion and
potatoes. Wash and pat dry spinach leaves. Heat oil till smoking hot and dip the vegetables in the batter and deep fry till golden brown. Serve hot.

KHASTA DAL KACHORI ..







Ingredients:
3/4th cup skinless dried black beans (urad)
4 cups Flour (atta)
1 green chili chopped
1/2tsp Salt
Oil for deep frying
1tbsp anise seeds (Saunf)
1tsp coriander seeds
1tsp white cumin seeds
1/2tsp red chili powder
1/4th tsp asafoetida powder
Preparation:

  • Soak the beans in water overnight then rinse and drain.
  • Sift the flour and gradually add enough water to make soft dough. Cover the dough with damp cloth and leave for 30 minutes.
  • Grind the drained beans with the chili powder, salt and spices to make stuffing. Mix well and divide it into 16 equal portions.
  • Divide the dough into 16, using wet hands, and smear each portion with a little oil.
  • Flatten and roll out into 2inch round.
  • Wrap one portion of stuffing in each round and roll into a smooth ball, using greased hands.
  • Flatten and roll into a 3-4 inch round.
  • Heat plenty of oil in a deep frying pan or a kadhai.
  • Now lift the rolled kachori and carefully slip it into the hot oil.
  • Immediately start flickering hot oil over the top of it with a spatula so that it will swell up like a ball.
  • This should take only a few seconds. Flip the kachori over and cook the other side until golden brown.Serve the dal kachori hot with chutney

CHICKEN SHASHLICK



500 gms boneless chicken breast
2 capsicum
2 medium onions
2 medium tomatoes
1/4 cups lemon juice
1/2 tsp. salt
1 tsp black pepper
1 tbsp Soya sauce
1 tbsp hot sauce
oil for deep frying





  • Cut chicken into 1 " pieces.
  • Put in a round dish with the lemon juice, salt ,black pepper soya sauce and hot sauce.
  • Mix well,cover and leave to marinate for 2-3 hours.
  • Cut the onion, capsicum, and tomatoes into small cubes.
  • Skew chicken and vegetables closely on bamboo skewers.
  • Heat up oil in a big size frying pot or karahi.
  • Fry skewers for 8-10 minutes or until chicken begin to change its color and the vegetables are soft.
  • Take off from oil and put it on absorbent paper.
  • Or you can grill the chicken over hot charcoal.
  • Decorate with lemon pieces and mint leaves.
  • Serve with hot with mint chutney.

RESHMI SEEKH KABAB





Ingredients
chicken mince/or beef mince - 500 gms
bhuna besan - 3 tbsp
javitri powder - 1/2 tsp or less
cinnamon powder - 1/2 tsp
khash khash - 2 tsp
pisa garam masala - 1 tbsp
coconut powder - 1 tbsp
white zeera powder - 1 tsp
ginger garlic paste - 3 tsp
dahi (dahi ka pani na ho to acha hai) - 2 tbsp
fried brown onion (pisi hoi) - 3 tbsp
oil (jismain pyaz fry kari thee) - 1 tbsp
papaya paste - 1 tbsp
cream (plain regular) - 2 tbsp
namak - 1 tsp full or to taste
pisi lal mirch - 1 tbsp or to taste

Method:
Marinade mutton with papaya let stand for 1 hour.if using mutton or beef than for 2 to 3 hrs.mix all ingrediants n marinate in fridge for 1 hour.make long seekh kababs n fry.
*You can also grill the fried kababs!*

Yogurt Kabab



Ingredients:
6 Potatoes boiled(peeled and mashed)
Yogurt (drained)
Spring Onion 5-6 (chopped)
4 clove garlic chopped
3-4 green chillies
Bread crumbs as required
2 eggs
red chilli flakes 1 Tbsp or to taste
salt to taste

Method:
Add 2Tbsp drained yogurt, red chilli flakes, salt, garlic, Green chilli, spring onion in mashed potatoes.
Make small kababs, coat in beaten eggs, roll in bread crumbs and shallow fry untill golden brown.
